Trufas de mantequilla de cacahuete

Hace meses que no participaba en el " Reto Cocinillas". Para el que aún no lo sepa, el "Reto Cocinillas" consiste en hacer una receta de Lorraine Pascale propuesta cada mes,por el grupo de Facebook. Soy más de hacer las dulces, además, he estado muy atareada los últimos meses, y a mi pesar no he podido participar en ninguno.

La receta más votada de este mes, fueron unas trufas de mantequilla de cacahuete. Al ser una receta sencilla, pensé que no me quitaría mucho tiempo de mis quehaceres, y la verdad es que muy rápida y fácil de hacer,  deliciosa, y perfecta para regalar en Navidad.

Aquí tenéis las recetas del resto de los participantes:




Ingredientes para unas 15 trufas:

  • 120 ml de nata para montar
  • 200 grs de chocolate con leche
  • 200 grs de chocolate negro de cobertura
  • un dado de mantequilla
  • 5-6 cdas de mantequilla de cacahuete con trocitos.

En la receta original las trufas están bañadas con chocolate con leche, pero a mi me pirra el chocolate negro, así que hice ese pequeño cambio.

Ponemos la nata en una olla y calentamos hasta que casi hierva. Apagamos el fuego y añadimos el chocolate con leche y la mantequilla. Retiramos el cazo del fuego y dejamos reposar 6-8 minutos sin remover. Después removemos hasta que quede una mezcla homogénea y brillante.

Verter la mezcla en un bol e incorporar con cuidado la mantequilla de cacahuete. Dejar enfriar un poco y meter en la nevera toda la noche o mínimo unas horas.

Cuando la mezcla se endurezca, sacamos el bol de la nevera y con la ayuda de una cuchara o sacabolas hacemos unas bolas de la cantidad de 1 cda. Las colocamos sobre una bandeja con papel de horno y hacemos lo mismo con el resto de la mezcla. Cuando acabemos con todas, ponemos la bandeja en la nevera mientras calentamos el chocolate.

Tenemos dos formas de calentar el chocolate. La más sencilla es al microondas, colocando los 200 grs en un bol y con el programa de descongelación lo ponemos en periodos de 1 minuto y vamos removiendo hasta que quede líquido del todo, pero no muy caliente.

Otra forma, es derretirlo al baño María. Usamos un cazo con un poco de agua y colocamos otro cazo más pequeño encima con el chocolate. Colocamos al fuego hasta que el chocolate se derrita.

Sacamos las bolas de la nevera y con la ayuda de de un tenedor, las sumergimos en el chocolate y luego al sacarlas las dejamos escurrir un poco en el chocolate. Ponemos las trufas en la bandeja del horno forrada.

Podemos utilizar el chocolate que nos ha sobrado para decorar las trufas. Volvemos a derretir un poco el chocolate y con una manga pastelera hacemos rayitas transversales, que le darán un toque de pastelería.






Vais a morir de gusto en cuanto mordáis estas trufas, son un éxito asegurado.

Nutella y Toffee Bundt Cake- #BundtBakers





Hola a todos de nuevo. Hoy os traigo como cada mes, el reto #BundtBakers. El tema de este mes, "Chocolate caliente". La idea consistía en como solemos personalizar nuestro chocolate caliente, por ejemplo, a mi me gusta echarle nubecitas pequeñas encima, como hacen los americanos.

Quería inspirarme en este tipo, pero pensé que mi bundt se parecería mucho al "Fantasy Rocky Road" que hice en el mes de mayo o incluso al "Pretzel´s Crown in a S´more Bundt Cake" de septiembre.

Ya había hecho un par de bundts de chocolate este año, y no me apetecía hacer otro parecido, así que pensé en cosas que llevan chocolate, y me acordé de la deliciosa Nutella, esa crema de cacao con ese alto sabor a avellanas que me enloquece. Para enriquecer ese sabor incluso más, añadí a mi bundt avellanas caramelizadas en su interior, y continuando con el caramelo, preparé una salsa de toffee perfecta.

Hi everyone again. Today I bring you as every month, the #BundtBakers challenge. The theme of this month, "Hot Chocolate". The idea was how we should taste our hot chocolate, for example, I like to drop in little marshmallows, like the americans do.

I would inspirime me in that kind, but I thought it was similes than "Fantasy Rocky Road"  of may or even "Pretzel´s Crown in a S´more Bundt Cake" of september.

I made this year a pair of chocolate bundts, and I didm´t want to make another similar, thats why I thought in things with chocolate, and I remember the delicious Nutella, that chocolate cream with a high hazelnut taste that drives me crazy. To enrich this taste even more, I added in my bundt candied hazelnuts, and a perfect toffee sauce.

Ingredientes para las avellanas caramelizadas:


  • 200 grs de avellanas
  • 100 grs de azúcar
  • 2 cdas de agua
  • unas gotas de zumo de limón

Preparamos una bandeja con un papel de horno que habremos engrasado con aceite.

Primero hacemos las avellanas caramelizadas para que nos vayan enfriando. En una sartén ponemos el azúcar, el agua y el zumo de limón. Cuando el caramelo empiece a dorarse, añadimos las avellanas y removemos unos minutos para que todas estén bien impregnadas de caramelo. Echamos las avellanas en la bandeja con el papel y dejamos enfriar.

Ingredients for candied hazelnuts:

  • 200 g hazelnuts
  • 100 g sugar
  • 2 tablespoon water
  • few drops of lemon juice
Prepare a tray with oven paper greased with oil.

First we are going to cook the candied hazelnuts to be cold and ready meanwhile we prepare the bundt. In a pan , put the sugar, water and the lemon juice. When the candy starts to go browns, add the hazelnuts and stir them a few minutes. Put the hazelnuts in the tray with the oven paper, and let them cold.

Ingredientes para el bundt:

  • 300 grs de harina
  • 1 cdta de levadura royal
  • 1/2 cdta de sal
  • 180ml de aceite de girasol
  • 300 grs de azúcar
  • 5 huevos
  • 250 ml de nata líquida para montar
  • 1 cdta de zumo de limón
  • 300 grs de Nutella
Precalentamos el horno a 180ºC. Engrasamos un molde de Bundt, mejor con un spray antiadherente.

En un bol, tamizamos el harina, la levadura y la sal.

En la nata líquida echamos el zumo de limón y dejamos reposar unos 10 minutos.

Batimos el aceite con el azúcar y vamos añadiendo poco a poco los huevos. Añadimos la Nutella y seguimos batiendo hasta que esté todo bien integrado.

Añadimos por tandas el harina y la nata con el zumo de limón. Seguimos batiendo hasta que todo esté bien incorporado.

Cogemos las avellanas que teníamos caramelizadas y en un robot procesador las picamos ligeramente. Ahora, las añadimos a nuestra masa y removemos un poco.

Repartimos la masa en el molde que no sobrepase a los 2/3 y horneamos entre 55-60 minutos o hasta que al meter un palillo de madera este salga limpio. Dejamos que se enfríe en el molde y luego desmoldamos obre una rejilla de metal.

Ingredients for the bundt:

  • 300 g flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 180 ml sunflower oil
  • 300 g sugar
  • 5 eggs
  • 250 ml whipped cream
  • 1 teaspoon lemon juice
  • 300 g Nutella

Preheat the oven to 180º C / 350º F / gas 4. Grease our bundt pan, better with a non-stick spray.

In a bowl, stire the flour, salt and the baking powder. Reserve.

Add to the whipped cream the lemon juice and let it for 10 minutes.

Cream the olive oil with the sugar and the eggs, until all is mixed. Add the Nutella and continue mixing until all will be combined well.

Toss the flour and the whipped cream with the lemon juice by turns. Continue mixing.

Take the candied hazelnuts and chop them lightly with the food processor. Now, we are going to add them to the batter, and mix.


Pour the batter in the pan only 2/3 and oven for about 55-60 minutes or until a skewer inserted into the center of the bundt comes out clean. Let cool in the pan and then turn out on a wire rack.





Para hacer el toffee, sólo tenemos que seguir esta receta. La pondré en inglés igualmente para nuestros amigos de habla inglesa.





Ingredients for toffee:


  • 150 g sugar
  • 45 ml water
  • 120 ml whipped cream at room temperature
  • 60 g butter
In a saucepan put the sugar and the water, and let them go brown without remove it. Take out of heat and add carefully the whipped cream, mix well and add the butter too. Put the sauce in the heat and stir until all will be combined. Let it cold and use over our bundt cake.

Pretzels Crown in a S´more Bundt Cake


Me ha encantado el reto de #BundtBakers este mes. Se trataba de hacer un bundt inspirado en un postre tradicional de Estados Unidos y Canadá, que se consume habitualmente en las fogatas nocturnas como la de los Boy o Girls Scouts, y que consiste en un malavavisco (nubes) tostado y una capa de chocolate entre dos trozos de galletas Graham.

I love the #BundtBakers challenge of this month. It was about a bundt inspirited in a  dessert of USA and Canada, is a traditional nighttime campfire treat popular, consisted in a roasted marshmallow and a layer of chocolate sandwiched between two pieces of Graham crackers.

Hemos hecho un Bundt Cake super chocolateado, relleno de galletas Graham, pero en este caso como no las encontré compré una base de pie Graham y la desmigué. Por encima hemos echado un merengue suizo que luego hemos tostado con un soplete y una corona de pretzels saladitos.

We cooked a super chocolaty, filled of Graham crackers, but in this case I didm´t find them so I bought a Graham pie for fill and I crumble it. I made a swiss meringue to toss all over the bundt, and then we toast it with a blowtorch and a salty pretzels crown.

Ingredientes para el bundt:

    • 180 ml de aceite de oliva suave
    • 500 grs de azúcar
    • 300 grs de harina
    • 4 huevos
    • 300 ml de leche
    • 100 grs de perlas de chocolate
    • 2 cdtas de vainilla en pasta
    • 300 ml de agua hirviendo
    • 100 grs de cacao en polvo
    • 4 cdtas de levadura
    • galletas graham machacadas o una base de galletas para pie de galletas graham

    Ingredients for the bundt:

      • 180 ml soft olive oil
        • 500g sugar
          • 300g flour
            • 4 eggs
              • 300 ml whole milk
                • 100 g choco chips
                  • 2 teaspooo vanilla paste
                    • 300 ml boiling water
                      • 100g cocoa powder
                      • 4 teaspons baking powder
                      • graham crackers


                      Preparación bundt:

                      Precalentamos el horno a 180ºC. Engrasamos nuestro molde de bundt cake, mejor con un spray. Yo he usado mi nuevo molde "Kugelhopf"para hacer este bundt.

                      En un bol, tamizamos harina cacao y levadura. Reservamos.

                      Batimos aceite, azúcar y los huevos hasta que estén integrados. Incorporamos la harina y el cacao. Cuando la mezcla sea homogénea, añadimos la leche y la vainilla. Agregamos el agua hirviendo y batimos de nuevo. Echamos los chips de chocolate y por ultimo las galletas Graham. La masa va a quedar muy líquida, y es más, nos sobrará un poco que podremos usar para hacer por ejemplo, cupcakes.

                      Repartimos la masa en el molde que no sobrepase a los 2/3 y horneamos entre 50-55 minutos o hasta que al meter un palillo de madera este salga limpio. Dejamos que se enfríe en el molde y luego desmoldamos obre una rejilla de metal.


                      Directions for the bunt:

                      Preheat the oven to 180º C / 350º F / gas 4. Grease our bundt pan, better with a non-stick spray.  I used my new pan "Kugelhopf" for this bundt.

                      In a bowl, stire the flour, cocoa powder and the baking powder. Reserve.

                      Cream the olive oil with the sugar and the eggs, until all is mixed. Add the flour with the cocoa. When the batter will be homogeny, add the milk ant the vanilla paste. Add the boiling water and continue creaming. Toss the choco chips and the Graham crackers. The batter will be pretty liquid, and moreover,  will remain a little to make for example, cupcakes.

                      Pour the batter in the pan only 2/3 and oven for about 50-55 minutes or until a skewer inserted into the center of the bundt comes out clean. Let cool in the pan and then turn out on a wire rack.




                      Ingredientes para el merengue suizo:

                        • 3 claras de huevo
                        • 350 grs de azúcar
                        • 125 ml de agua
                        • 1 y 1/2 cda de glucosa (Karo)
                        • 1/8 cdta de sal
                        • 1 y 1/2 de esencia de vainilla

                        Ingredients for the swiss meringue:

                        • 3 egg whites 
                        • 350 g sugar
                        • 125 ml water
                        • 1 and 1/2 tablespoon Karo
                        • 1/8 teaspoon salt
                        • 1 and 1/2 vanilla essence

                        Preparación del merengue suizo:

                        Poner en un bol las claras, el azúcar, el agua, la sal y el sirope Karo.

                        Colocar el bo al baño maría y mezclar hasta que se disuelvan los granos de azúcar.

                        Retirar del fuego y seguir batiendo en la batidora a una velocidad alta, durante unos 10 minutos. Echar la esencia de vainilla.

                        Directions for the swiss meringue:

                        In a bowl bain-marie, put the egg whites, sugar, water, salt and Karo.

                        Mix all until the sugar is dissolve completely.

                        Remove the bowl and place it in a bowl mixer, mixing in a high velocity during almost 10 minutes. Incorporate the vanilla essence.

                        Decoración del bundt:

                        Necesitaremos una manga pastelera, un soplete y unos pretzels pequeños de los saladitos. Echamos en la manga pastelera el merengue y lo colocamos de forma vertical sobre nuestro bundt. Colocamos encima de todo los pretzels como si fueran una corona, y para rematar, quemamos con un soplete el merengue.

                        To decorate the bundt:

                        We need a pastry bag, a blowtorch and a little salty pretzels. Put the meringue in the pastry bag and add it in a vertical way on our bundt. Put over all the pretzels like a crown, and to finish, burn wit the blowtorch the meringue.











                        Como he dicho antes, me sobró un poco de masa, así que hice unos mini cupcakes muy monos.

                          Estamos aquí de nuevo con el reto #BundtBakers. El reto de julio consistía en hacer un bundt utilizando frutas y frutos secos como ingredientes principales.

                          Me venían a la mente un montón de combinaciones, pero me apetecía hacer un bundt con plátano, y combinarlo con mis frutos secos preferidos los anacardos y los cacahuetes. Además, le añadí unos chips de chocolate, para darle el toque final. Le he llamado "Banana Monkey", por que a los monos   ( al menos a los de los dibujos) les gustan los plátanos y los cacahuetes.

                          Se han horneado unos Bundt Cakes geniales, que podéis ver en el grupo de Pinterest o en el grupo Bundt Bakers.

                          I had many combinations in my mind, but I would rather to make a bundt with banana, and mix it with my prefers nuts, cashews and peanuts. As well, I added a chocolate chips, to give final touch. I call it " Banana Monkey", because monkeys ( at least cartoons monkeys) like bananas and peanuts.

                        Ingredientes:

                          • 200 grs de mantequilla a temperatura ambiente
                          • 500 grs de azúcar
                          • 6 huevos
                          • 600 grs de harina con levadura incorporada
                          • 240 ml de leche
                          • 2 plátanos triturados
                          • 1 cda de vainilla en pasta
                          • 150 grs de anacardos y cacahuetes
                          • 100 grs de chips de chocolate


                          Preparación:

                          Precalentamos el horno a 180ºC

                          Con la batidora eléctrica a velocidad media alta, mezclamos la mantequilla con el azúcar hasta que queda una pasta pálida.

                          Añadimos los huevo uno a uno, y batiendo siempre después de cada añadido.

                          Bajamos la velocidad de la batidora y le añadimos la harina tamizada en varios tiempos combinándola con la leche.

                          Por último, añadimos los plátanos triturados, los anacardos, los cacahuetes y la vainilla en pasta, mezclamos bien.

                          Engrasamos nuestro molde de bundt cake, y echamos los chips de chocolate de manera que decoren el bundt. Yo elegí el molde "Heritage", para que quedara mucho más bonito, e introduje los chips en las ranuras.



                          Vertemos la masa en el molde, procurando llenar sólo 2/3 del molde. Esta masa es demasiada para sólo un molde de bundt, así que podemos aprovechar y hacer unos muffins con la que nos sobra.

                          Horneamos durante 55 min o 1 hora más o menos, o hasta que al introducir un palillo este salga limpio.

                          Dejamos enfriar en el molde, y después lo desmoldamos en una rejilla para que acabe de enfriarse. Veremos que este bundt no necesita más decoración, los chips de chocolate ya nos sirven para que quede un bundt precioso.

                          Ingredients

                            • 200g butter
                              • 500g sugar
                                • 6 eggs
                                  • 600g self-raising flour
                                    • 240 ml whole milk
                                      • 2 blended bananas
                                        • 1 tablespoon vanilla paste
                                          • 150g cashews and peanuts
                                            • 100g choco chips

                                            Directions:

                                            Preheat the oven to 180º C / 350º F / gas 4. 

                                            With the electric mixer in a hight velocity, cream the butter and the sugar until the batter become pale.

                                            Add the eggs one at time, until combined, with the mixer turn.

                                            Turn down the velocity of the mixer, and add the sifted flour, in several times combined with the milk.

                                            Finally, fold the blended bananas, cashews, peanuts and the vanilla paste, combined well.

                                            Grease our bundt pan, better with a non-stick spray. Add the choco chips in the edges of the pan. I used a " Heritage" pan because the shape could give it a beautiful touch.

                                            Pour into  the pan only 2/3. This batter is too much for only a pan, so we could use the rest to make muffins or whatever you want.
                                            Oven  for about 55- 60 minuts or until a skewer inserted into the center of the bundt comes out clean.

                                            Leave the bundt in the pan to cool, and then turn out. We´ll see this bundt cake no needs more garnishes, only with the choco chips gives it a beautiful touch.

                                            Como estamos pasando una ola de calor del copón, no me resistí en hacer un helado de frambuesas, que le venia que ni pintado al bundt de plátano.

                                            A pain in the neck heat wave is happening now, so I couldn t resist to make a home made raspberry ice cream, it fitted like a glove with the banana bundt cake.

                                            Esta es la primera vez que participo en el reto #BundtBakers. Encontré el reto de casualidad, estaba navegando por la red, cuando vi que un grupo de personas se reunían cada mes para hornear bundt cakes con un tema en común propuesto por la anfitriona. Como estas cosas me emocionan un  montón, investigué para poder apuntarme al reto.

                                            El tema principal de este mes es "Rocky Road". Se le llama Rocky Road a todos esos dulces de chocolate (galletas, bizcochos, helados...) a los que añadimos nubes, galletas y  frutos secos como decoración.

                                            Se han horneado unos Bundt Cakes geniales, que podéis ver en el grupo de Pinterest o en el grupo Bundt Bakers.

                                            Yo llamo a mi Rocky Road, fantasía, por las galletitas tan monas que encontré en Tiger, son como joyas. También compré las nubes allí, y tienen chocolate y frutos secos, entre otra cosas. Añadí a mi bundt arándanos secos, que me recuerdan a los rubíes, así todo queda como más mágico.

                                            I call it "Fantasy Rocky Road", because the biscuits so cute I found in Tiger, are like jewels. I bought also, marshmallow there, and they have chocolate, dried fruits, among other things. I added to my bundt dried cranberries, that remind me rubies, this way all is more magic.



                                            Ingredientes:

                                            • 225 grs de harina
                                            • 2 cdtas de levadura
                                            • 1 cdta de bicarbonato sódico
                                            • 4 cdas de cacao en polvo sin azúcar
                                            • una pizca de sal
                                            • 225 grs de mantequilla
                                            • 250 grs de azúcar 
                                            • 4 huevos batidos
                                            • 6 cdas de suero de leche
                                            • 2 cdtas de extracto de vainilla

                                            Para la cobertura:

                                            • galletas (usé las de Tiger)
                                            • nubes
                                            • arándanos rojos secos
                                            • nueces
                                            • 200 grs de chocolate para fundir
                                            • 200 grs de nata para montar


                                            Preparación:

                                            Precalentamos el horno a 180ºC. Engrasamos el molde, mejor con un spray antiadherente.

                                            En un bol, tamizamos el harina con la levadura en polvo, el bicarbonato,  la sal y el cacao en polvo. En otro bol, batimos la mantequilla hasta que quede pálida y esponjosa, añadimos el azúcar y batimos 2 minutos más. Añadimos con cuidado los huevos batidos, y batimos todo hasta que esté bien mezclado.

                                            Añadimos los ingredientes secos por tandas, combinándolos con la buttermilk mezclada con la vainilla. Acabamos con los ingredientes secos.

                                            Echamos la preparación en el molde, le damos unos ligeros golpes contra la encimera para que salgan las burbujas de aire. Horneamos entre 50-60 minutos, o hasta que al insertar un palo en el centro, este salga limpio.

                                            Sacar del horno, dejar enfriar en el molde y desmoldar en una rejilla para que se enfríe por completo.



                                            Ingredients

                                            • 225g plain flour
                                            • 2 teaspoons baking powder
                                            • 1 teaspoon bicarbonate of soda
                                            • 4 tablespoons cocoa powder without sugar
                                            • pinch of salt
                                            • 225g butter
                                            • 250g sugar
                                            • 4 beaten eggs
                                            • 6 tablespoon buttermilk
                                            • 2 teaspoons vanilla extract


                                            To decorate:

                                            • Biscuis (I used Tiger´s)
                                            • marshsmallows
                                            • dried cranberries
                                            • walnuts
                                            • 200g chocolate for melt
                                            • 200g whipped cream

                                            Directions:

                                            Preheat the oven to 180º C / 350º F / gas 4. Grease our bundt pan, better with a non-stick spray.

                                            In a bowl, sift the flour with the baking powder, bicarbonate of soda, salt, and the cocoa powder. In other bowl, cream the butter until it becomes pale and fluffy, add the sugar, and beat 2 more minutes. Put gently the beaten eggs, until all will be combined well.

                                            Add the dried ingredients combined them with the buttermilk, mix with the vanilla, several times, and finish with the dried ones.

                                            Pour into the prepared pan, and lightly beat the pan to take the bubbles out. Oven  for about 50- 60 minuts or until a skewer inserted into the center of the bundt comes out clean.

                                            Leave the bundt in the pan to cool, and then turn out.



                                            Preparamos una ganache. Cortamos el chocolate en trozos pequeños y los colocamos en un bol. Calentamos la nata hasta que empiece hervir, la retiramos del fuego y la echamos en el bol del chocolate. Movemos con una espátula hasta que todo quede bien integrado. Dejamos enfriar.

                                            Vamos a decorar nuestro bundt. Cogemos la ganache templada y la echamos por encima de nuestro bundt, repartiéndolo bien por toda la superficie.

                                            Let´s prepared the ganache. Cut the the chocolate in a little pieces, and put the into a bowl. Heat the whipped cream until begin to boil, remove to the heat and add it into the chocolate bowl. Stir with a palette knife until all is combined well. Let cool.

                                            We are going to decorate our bundt. Take the ganache, and pour it warm over the bundt cake, spreading well.



                                            Acabamos añadiendo por encima el resto de los ingredientes (nubes, galletitas, nueces y arándanos).

                                            ¡Y listo para disfrutar!

                                            Finish adding above the rest of the ingredients (marshmallows, biscuits, walnuts and the cranberries).
